MoFo Post #23: Barley!

anatomy:
1 small leek
mushrooms
4 c veggie broth
1/2 c pearl barley
salt, pepper
soy curls
3 dried shiitake mushrooms
rosemary and thyme
dash of liquid smoke
dash of soy sauce
cubed pumpkin

Once again, this turned out more like a stew than a soup, but that’s just the way I like it.

What I started out with: Leeks and mushrooms. (Sauté till soft.)

Add the broth:

Then think of more stuff to add: Above all, pearl barley. Oh, and soy curls. And shiitake mushrooms. Start experimenting with spices.

Simmer until the barley is just right (approx. 30 minutes). 10 minutes before that, remember to add some cubed pumpkin.

Perfect autumn/winter comfort food. I think this will become a staple.

  1. Those were the last ones from my ppk swap package!
    However, I can get soy balls from the Indian supermarket that are very similar, but have a slightly different taste and texture.
